Atlantic Cod baked in tomatoes
Ingredients:
- 1 chain pack Atlantic Cod (4x5oz fillets)
- 2 chopped red peppers
- 2 red onions roughly cut
- 1 cup black olives
- 340 gr tomato passata
- 400g drained butter bean can.
- Handful of basil
Directions:
- Preheat oven to 392°Fahrenheit
- Take a large deep oven dish and put the peppers, onions, tomatoes, and olives into it and cook for 15 minutes.
- Take the oven dish out, the vegetables should be soft and char at the edges.
- Mix the passata, butter beans and the seasoning with the vegetables and put the Cod in.
- Put the oven dish back in the oven and cook for 15 minutes.
- Before serving put a handful of basil on top of the baking tray and serve.
