Atlantic Cod baked in tomatoes

Ingredients:

  • 1 chain pack Atlantic Cod (4x5oz fillets)
  • 2 chopped red peppers
  • 2 red onions roughly cut
  • 1 cup black olives
  • 340 gr tomato passata
  • 400g drained butter bean can.
  • Handful of basil

 

Directions:

  • Preheat oven to 392°Fahrenheit
  • Take a large deep oven dish and put the peppers, onions, tomatoes, and olives into it and cook for 15 minutes.
  • Take the oven dish out, the vegetables should be soft and char at the edges.
  • Mix the passata, butter beans and the seasoning with the vegetables and put the Cod in.
  • Put the oven dish back in the oven and cook for 15 minutes.
  • Before serving put a handful of basil on top of the baking tray and serve.
