Cod with summer influence

Ingredients:

  •         4x5oz Cod fillets (1 chain pack from www.pureicelandseafood.com)
  •         Salt
  •         Ground pepper
  •         6 tablespoons pistachio nuts chopped
  •         6 tablespoons + zest of 1 lemon
  •         1 dl fresh parsley chopped
  •         ½ chili finely chopped.
  •         Olive oil

Directions:

  •         Mix nuts and vegetables together with lemon juice and put to the side.
  •         Season the cod fillets with salt and pepper.
  •         Heat a pan on the stove with olive oil and fry the Cod for about 2-3 minutes each side.
  •         Preheat oven to 390°fahrenheit
  •         Put the cod in an oven dish
  •         Take the nuts and vegetable mix and split it evenly on top of the Cod fillets.
  •         Bake in the oven for 4 minutes.
